Chanterelle: Cantharellus cibarius

PRODUCT HIGHLIGHTS

Cantharellus cibarius is commonly known as the chanterelle, golden chanterelle or griolle. It is probably the best known species of the genus Chantarellus, even the entire family of Cantharellaceae. It is orange or yellow, meaty and funnel-shaped. Chanterelle emits a fruity aroma reminiscent of apricots and a mildly peppery taste and is considered an excellent edible mushroom.

Like many other fungi, chanterelles form associations known as mycorrhizae with the roots of particular tree species. It is found in deciduous and coniferous forests in the lowlands, hilly and mountainous area. The most common is in deciduous forests with beech and oak where at some places can be found in the moss in large quantities.

It was considered that habitat of C. cibarius is Europe, Asia, North America and some parts of Africa but recent research has made it clear that Cantharellus cibarius is a strictly European species.

ID&ECOLOGY

Cantharellus cibarius is a medium to large mushroom, with shallowly funnel-shaped fruiting body with gills replaced by forked ridges. Color is egg-yellow with a hint of red, fading with age. Cap is 30-70 (120) mm, depressed in the center and often has a heavy margin which is wavy. The stalk is 30-60 (90) mm high, solid and colored like the cap, maybe paler. The flesh is firm, thick and yellow.

Similar species are other types of edible chanterelle, for example, Cantharellus friesii that grows smaller and has bright orange color of the cap or C. amethysteus which has the cap covered with a violet colored flakes. It can be replaced with Omphalotus olearius a poisonous mushroom which grows on dead wood.

MANAGEMENT

In Croatia collecting, trade and management of fungi are regulated with „Pravilnik o zaštiti gljiva (Regulation on Fungi Protection)“ NN 34/2002. Cantharellus cibarius is commercial type of fungi and can be collected for the purpose of processing, trade and other traffic. A single commercial mushroom collector for the purpose of processing, trade and other traffic may daily collect a maximum of 10 kg.
